Success! We learned how to melt plant-based cheese for a grilled cheese sandwich.

As a mother and sole caregiver of a child with dairy allergies and medical conditions, I often feel isolated and alone in my Journey.

My son, Anthony Xavier, has cystic fibrosis and is highly allergic to dairy products such as cheddar cheese, parmesan cheese, and various dairy-containing items like cake and ice cream.

Additionally, cinnamon triggers a red rash all over his skin, and he only seems to tolerate peanut butter and nuts well for weight gain.

Fortunately, I discovered the world of dairy-free alternatives, particularly various cheeses, which has become a passion of mine as I seek out options for Anthony’s restricted diet.

His nutritionist, Erica, and I have been working closely together to find options for Anthony that do not require dairy to reach his weight gain goal of 60 pounds.

We are currently at 50 pounds and hope to see good results from these recipes for him. Anthony is 10 years old and in the very low percentile on the charts.

I advocate for bilingual families of children with medical conditions and agree that many parents must be aware of the potential for accidents during holidays and school events when allergens are present, even with a backup plan.

Every parent’s and caregiver’s worst fear is that your child accidentally eats dairy at school. Uh oh!

Unfortunately, that happened to my son!! Anthony had an anaphylactic reaction at school. He mistakenly ate a cake cookie that he thought was dairy-free but contained real Dairy!!!

Poor Anthony!!

After eating the cookie, he began to swell up and suffered an anaphylactic attack.

The school promptly followed the emergency action plan and administered Benadryl, then an EpiPen shot before emergency services transported him to the hospital.

Thankfully, the EpiPen provided quick relief, and Anthony recovered after spending a few hours under observation. Although this experience was terrifying, I’m grateful for the school’s effective handling of the situation.

As a result of this incident, I’m determined to educate myself more about dairy-free nutrition to help Anthony feel more included in social events where dairy-filled foods are common.

I usually send a snack of his choice, but it’s not the same as watching everyone around you enjoy a “dairy delight.”
